This is the ultimate comfort food for those cooler autumn days, Plant Based Vegan Cottage Pie. I had friends round for dinner the other night and made it for them. It does take a bit longer than my usual recipes to make, but boy is it worth it. I’ve also made it with different types of beans rather than the pulses but the consistency isn’t the same, although the flavour still pops.
