My November Plant-Based Lunches Week 3

As the days get colder and darker, my soups seem to get thicker! This week, my November Plant-Based Lunches Week 3 consisted of thick vegetable soup full of spring cabbage, celery, Brussels sprouts, carrots, split peas, barley and leeks.

My batched salads this week featured spinach, rocket/arugula, watercress, chard, spring onions/scallions, red peppers, beetroot, baby plum tomatoes, cress, fennel and a generous amount of black pepper. I also toasted some mixed seeds ready to sprinkle on my salads when I have them.

Occasionally, I make-up one of my oil free salad dressings to add to my salads, but I generally like them as they are, undressed and bursting with goodness!

If you’re a regular reader then you’ll know that I take an hour, usually on a Sunday while I’m making Sunday dinner, to create my lunches for the week. It’s my batching hour when I make my soup and salads, parcel up my bread and fruit for the week ahead. As you can imagine, I’ve got it down to a fine art now and have a little production line going.

My deliciously thick veg soup stuffed with spring cabbage, celery, Brussels sprouts, carrots, split peas, barley and leeks and a salad and apple made up my lunch on Monday 13th. Not to mention a few toasted almonds.

Tuesday saw me eating my thick and delicious homemade veg soup, salad packed with yummy ingredients again, all finished off with a sprinkling of toasted nuts and seeds.

Wednesday and it was a super simple, delicious salad sprinkled with toasted nuts and seeds.

Thursday and it was my roasted tomato soup and a salad stuffed with borlotti beans, pickled, baby onions, cucumber, red cabbage and olives. Delish!
