Over the next few weeks, I’m going to be posting my plant-based lunches so you can get to see what I eat everyday for lunch to hopefully inspire and motivate you to switch to a whole food, plant-based way of eating. It’s super simple, and as you can see there’s lots of delicious, filling food to keep you powered up throughout the afternoon.
Most of my lunches are batched on a Sunday – especially the soups and the salads, so I can literally grab and go in the morning. I tend to heat my soup and put it into a flask to take with me, but it only takes about five minutes at the most, so it’s no big deal.
During this week, I was out and about so I took a packed lunch with me, and I also grabbed a quick soup from a local garden centre I was near when an event I attended ran over.
On Monday it was a packed lunch, so I had vegetable soup, with a mixed leaf salad, some of my marinated artichokes, and a sandwich with homemade hummus. I ate this outside as it was such a stunning October day.
Tuesday saw me outside again eating, this time with a tomato and brown rice soup, mixed salad and sandwich that’s out of shot. Again my marinated artichokes make an appearance!
Wednesday and I managed to grab lunch at home. I made my super quick tomato and butterbean soup, topped
with fresh rosemary and basil leaves. I made a toasted sandwich with homemade hummus, homemade pickled beetroot, super sprouts and mixed leaves. My toasted sandwich was particularly delicious!
Thursday and it was homemade whole grain bread with homemade hummus, super sprouts and homemade pickled beetroot. I also made a big green salad and topped it with cress and an orange red pepper.
It’s Friday! And I was out and about today, so I had a delicious lentil and vegetable soup that was topped with fresh chives at the local garden centre and a brown roll.
