It’s the first week of November and it starts with the last day of October – Halloween. As usual, I had made a big pot of soup on Sunday and batched three days worth of salads. My soup this week? Vegetable! Stuffed with parsnips, Brussel sprouts, carrots, leeks, celery, black beans and barley. It was amazingly tasty.

It was a glorious start to the week with clear blue skies and a bit of a nip in the air. I decided to sit outside to have lunch so I made found a picnic bench and laid out my lunch, only to find that I had an unexpected visitor nibbling at my hand. Yes, you’ve got it, one of the cygnets you may remember from my post last week decided that it wanted my delicious sandwiches with spicy bean spread for their lunch!

Fortunately, I was able to push my lunch away so it couldn’t get at it. I don’t think spicy bean spread, even my plant-based one, would go down very well with the cygnet!

Tuesday and I took advantage of the lovely day again to have my lunch outside. Fortunately, the cygnet stayed away today and I was able to enjoy my vegetable soup and salad, with whole grain bread and Russet apple in peace.

Wednesday, and I pretty much had exactly the same as I did on Tuesday. Was it a bit boring having the same thing again? Absolutely not. It was as delicious today as it was on Monday.

Thursday and I was working from home today, so I had a couple of pitta breads stuffed with homemade falafel, mashed avocado, spicy salsa and mixed leaves with some beetroot and baby plum tomatoes – oh, and not forgetting some toasted walnuts.

It’s Friday! I had made some broccoli and chestnut soup on Thursday evening when I had my mum round for dinner, so I had it with another pitta bread stuffed with falafel, homemade salsa and guacamole that I had also made on Thursday night to have with some plant-based chilli. It was amazingly delicious.
