Week two of February brings us Valentines Day. Valentines Day isn’t all about loving others, it’s also about loving and taking care of your own heart too. If you’re a regular, then this week’s blog post needs little introduction, it’s my weekly roundup of lunches, and this week it’s My February 2018 Plant-Based Lunches Week 2.

I have a salad every day of the week and tend to batch make them on a Sunday while I’m making Sunday dinner. I store them in the fridge so I can just grab them on my way out in the morning. As you can imagine, I’ve got it down to a fine art now and have a little production line going.

Here’s a picture of the salads that I batched for this week:

Monday and it’s homemade, plant based veg soup stuffed with carrots, pulses, leeks, celery, Brussels sprouts and pearl barley, with a mixed salad. I’m too full for anything else!

Tuesday and it’s my homemade, plant based veg broth again with a mixed salad , whole grain bread and a juicy orange. Lovely and satisfying.

Wednesday and it’s Valentines Day! Today I had heart healthy homemade, plant based tomato soup with a salad stuffed with yumminess and sprinkled liberally with toasted nuts and seeds, whole grain bread and a juicy orange. Wonderfully satisfying.

Thursday and it was plant based plant based brown lentil soup, salad, red delicious apple and whole grain bread.

Friday was green! I had a super delicious green salad and my plant based green goddess soup.
