Hello,

I'm Caroline. I live in a lovely little village just outside Edinburgh, Scotland where I conjure up plant based whole foods for family and friends.

Here I am in the garden of my mum and dad's house when I'm about 6.

I adore eating a whole food, plant-based diet and I've been eating like this for many years, but I'm often asked what lead me down this path especially coming from Scotland and having two passionate meat eating brothers. I'm also regularly asked by family, friends and work colleagues how I've managed to stay the same shape and size over the past 30 years and have worn 'quite well' as they say, (except for a growing number of grey hairs!). Well, I'm going to share my secret with you, but first let me tell you how it all started.

Horrible, dry, weeping, scaly skin. Eczema!

I was fifteen and had chronic eczema. It was on my hands, face, eyelids and neck. As you can imagine for a fifteen year old it was all a bit embarrassing and made me very self conscious, hence me not being able to share with you any pictures of me at that time. It wasn't helped by the fact that when I tried to get a Saturday job I was turned down every time I tried. Cracked, red and weeping skin isn't that attractive!

The doctors prescribed the usual steroid creams and emollients. I was told to wear cotton gloves at night to stop the scratching and to stop washing with soap and water and use aqueous cream instead. None of these creams worked for very long so I turned to the 'alternative' community. I found a book called 'Superfoods' that explained that certain foods can help with different health conditions. I eagerly turned to the skin section and found lists of good and bad foods. I started cutting out the foods and eating more of the good foods. Over the following weeks my eczema pretty much disappeared as long as I kept to the list of good foods. As soon as I waivered it came back as red and weepy as before.

It's a brilliant lifestyle

That was the start of me eating a whole food, plant based diet that has stayed with me over the best part thirty years. Eating this way was a bit tricky in the beginning as not a lot of shops, supermarkets or restaurants had the food that I needed, but I persevered. It's become easier over the past few years but it's still a bit tricky for newbees so I'm here to guide you through the maze.

You'll find that eating a plant based diet will help you to lose weight, regain your health and you'll be able to eat as much as you want of the natural foods that you want to without putting on any weight. I know it's hard to believe, but it's the reason that I've stayed the same shape and size over the years. And I don't have horrible, scaly skin any more. My eczema is gone for good.

I eat delicious whole plant based foods every day and I'm going to share with you why you're going to love eating like this. There are many different diets around each one promising something whether it's better health, or quick and easy weight loss or both. The problem is they're not diets that you can keep to forever. You can with a plant based diet.

It's all about getting back to cooking and eating wholesome and nutritious food with plenty of fresh vegetables, fruits and grains rather than over processed foods, ready meals and fast food that have been stripped of their nutrients. Natural foods, that can be quick and easy to cook.

I write regularly here about helping you to adopt a whole foods, plant based diet. I give you hints, tips and recipes to help you on your way. I share with you the huge benefits that adopting this diet has brought to my life and, I hope, will bring to your life too.

My whole food plant based diet is based on eating unrefined starches, vegetables and fruits with small amounts of nuts, seeds and 'nutrient' dense greens. There's no animal fats, no processed foods and very little salt and sugar.

Getting qualified

Prompted by my passion for following a whole food, plant based diet I became certified in plant based nutrition through the Professor T. Colin Campbell Center for Nutrition Studies offers in partnership with eCornell. I also then went onto become a certified Food for Life Instructor so I could hold classes in plant based nutrition in my local community.

I know I can't reach everyone by holding classes, hence my website.
